Udon is a form of Japanese noodle that is served throughout the nation. It has made its way to the United States and other locations around the world and offers up an exceptional way to make a delicious meal quickly, without having to rely on the older, more traditional forms of noodles that you are probably familiar with.

The best part of this meal is, while there is a set recipe of vegetables that you can include with the meal, it is always possible to substitute new vegetables in order to give you a different kind of taste, should you crave something else.

To begin, you need to gather your ingredients. These are the starting ingredients for the recipe (although you are free to add or subtract as you wish):
- 2 packages of udon noodles
- 1/2 pound of sliced pork belly
- 1/2 medium sliced onion
- 1/2 carrot, cut and peeled into small sections
- 2-3 leaves of chopped cabbage
- 2 chopped shiitake mushrooms
- 2/4 green onion, cut into smaller, two-inch sections
- 2 tbsp of water
- 2 tbsp of men Tsu-yu seasoning
- 1 tsp of soy sauce
- 1 package of katsuobushi (dried bonito flakes)
- 1/4 of a green onion
- 1 tbsp of pickled ginger
To start your recipe, you want to heat oil in a wok set over medium-high heat. Add in the meat and cook it is almost brown, then add a pinch of salt and pepper for seasoning. Now, add in the onion and cook the onion until it is soft. Because you are keeping the meat in while you cook the rest of the items, it is necessary to start adding in the onion and other vegetables before the meat turns brown.
Now, add in the carrots, cabbage, shiitake mushrooms and the green onions, then fry for several minutes. From there, add in the udon noodles directly over the meat, then pour in the water and cook for two minutes while covered. If the noodles are hard when you purchase them, you need to follow the instructions on the package of the noodles in order to properly cook and heat the noodles up.
After the two minutes, add in the seasoning and mix everything together. Now, on a plate, you want to pour a few the bonito flakes, green onions, and the ginger onto the top of the plate. Now, add in the stir fried noodles over the top and serve. You can now enjoy the yaki udon noodles. Of course, you are able to swap in additional items should you desire, such as bamboo shoots, peppers or any other kind of vegetables that you might want. You can also swap out the shiitake mushrooms and include a different kind of mushrooms.
