ASIAN STYLE BAKED SEA BASS

INGREDIENTS

1 fresh sea bass fillet
1/2 finely sliced red chili
2 slices of lime
3 cloves of garlic
1 finely sliced spring onion
vegetable oil for frying
1/4 cup or 50 grams of butter
1 Tablespoon white wine
1/2 pack of choi
1/2 lemon juiced and seeded
1 Tablespoon soy sauce
pepper
sea salt

INSTRUCTIONS

1. Preheat oven to 350 degrees fahrenheit. Finely chop the red chili, lime, onion, and garlic.

2. Place a piece of baking paper on the bottom of a baking tray. Sprinkle with salt. Place the fish onto the bed of salt. With a sharp knife, score the top of the fish.

3. Add the lime, onion, chili, and garlic on top of the fish. Divide the butter and place on top of the fish. Add one Tablespoon of white wine.

4. Fold the parchment paper up to form a package for steaming the fish. Place tray in oven for eight to ten minutes. Remove and allow to rest.

5. Heat small amount of oil in wok over high heat. Add 2 cloves of crushed garlic, pak choi, salt and pepper. Stir in wok until wilted. Use soy sauce to deglaze the pan and transfer to serving bowl.

6. Plate pak choi on plate with fish fillet on top. Add a squeeze of lemon juice and a spoonful of heated soy sauce mixture to the fish parcel. Spoon this mixture over fish and serve hot.
