Calamari isn’t something you can only treat yourself to when you go out to eat. You can actually make this popular appetizer at home pretty easily. It’s a great way to surprise party guests or even just enjoy on your own with friends and family as a snack or starter. Fried calamari is a staple starter dish of Mediterranean cuisine and this recipe will recreate the crispy treat. The quantities serve 4 but can be easily be adjusted to serve more for a larger get-together.

Ingredients
16 ounces of sunflower oil
7 ounces of flour
3 medium-sized eggs
2 cloves of garlic, peeled and finely chopped
7 ounces of sourdough breadcrumbs
14 ounces of cleaned and sliced squid (probably about 2 squid)
2 handfuls of parsley leaves, roughly chopped
1 lemon, cut into wedges
salt and pepper
Step 1: Prepare The Pan For Frying
You will need a large, deep saucepan or a deep frying pan. Put it over high heat and begin to heat the sunflower oil. Take a pinch of flour and throw it into the oil. If it sizzles immediately upon contact then it means it is hot enough.
Step 2: Make The Calamari Batter
Put the flour into one large mixing bowl and then break the eggs into another mixing bowl. Beat the eggs lightly and season them with salt and pepper. In a third bowl, mix the breadcrumbs with a bit of salt and pepper.
Step 3: Prepping The Squid
Begin by tossing all of your slices of squid in the bowl with the flour. Make sure they are all pretty evenly coated. Take each slice of squid and then dip it into the egg. Allow the excess egg to drip off before then dipping the squid into the breadcrumbs. You can leave the squid in the breadcrumbs as you wait to fry them.
Step 4: Cooking Calamari
Don’t attempt to cook all of squid at once. You want to cook them in batches. Two batches should do the trick for this amount of squid. Drop about half of them into the oil and let them fry for about 2 minutes. It’s extremely helpful if you have a frying basket. You need to move and turn them so that they don’t stick together as they’re cooking. Use tongs to shift them around and brown all of the sides evenly. Remove them from the oil and allow them to drain on paper towels or on a bacon rack if you have one.
Step 5: Serve And Enjoy
Season the finished calamari with salt and pepper and sprinkle the parsley and garlic on top. Serve them on a platter with the lemon wedges on the side to squeeze over. Some people also enjoy their calamari with tomato-based sauces or even spicy mayonnaise. Tartar sauce is also a good sauce option and it is pretty easy to prepare. You may want to have several sauces for your guests to choose from.
