Sweet Caramel Nut Tart




Here is a tart delicious autumn nut that you can make with almost any mixture of nuts. Make sure you get the beans fresh as possible – from your local farmers market, or from the shops with high turnover such as Whole Foods. We use frozen beans from last year’s harvest. Nuts will become rancid, so be sure to check nuts before using them. Freeze nuts if still remaining. This recipe comes from Bon Appétit magazine, December 1998. Bon Appétit recipe called drizzling of melted white chocolate on top of the tart for decorative effect. Just one ounce of melted white chocolate over double boiler and using a fork to drizzle over tarts play. I do not think this tart needs more sweetness, so we skip that step. But it will be very good when using the whipped cream.
