It not only takes minutes to prepare and cook, it can be made with the minimal amount of ingredients. To put a unique twist on this classic dish, this recipe will also include a fresh avocado salad and toasted sourdough bread. Here are the simple steps on how to make Peruvian Ceviche.

Step 1. The Ingredients
To create this delicious dish, you are going to need 2 boneless skinless mackerel fillets, 1/2 tsp fish sauce, 3 1/2 limes, 3 slices of sourdough bread, juice of a 1/2 grapefruit, 1 tsp sugar, 1 1/2 finely chopped red chillies, 1 diced large ripe avocado, pinch of salt, small finely chopped bunch of flat leaf parsley, 1/2 finely chopped banana shallot, and a dash of extra virgin olive oil.
Step 2. Cooking Process
This recipe for Peruvian Ceviche serves two adults, so if you need to serve more people adjust the ingredients accordingly. The preparation time will only be fifteen minutes, and the cooking time will be twenty minutes. This recipe will go from preparation to serving dish in a little over a half hour.
Step 3. Making the Marinade
To prepare the marinade for the Peruvian Ceviche you will need to mix the juice of the 3 limes and half grapefruit. To get the juice without getting any skins in the juice, hold the half fruit over the bowl and insert a fork and twist. You will get more juice this way. In the bowl add the zest from one lime and 1/2 tsp of the fish sauce. Mix everything together and stir in 1 tsp of some sugar, then set the marinade aside.
Step 4. Preparing the Fish
Take the mackeral and cut it into small cubes, then add them into the marinade. Put over a low flame. While you are preparing the rest of the Peruvian Ceviche, allow the fish to marinate for 20 minutes.
Step 5. Avocado on Toast Side
During the time that the fish is marinating in the sauce, grab a bowl and place in the chopped avocado, half chilli, and the finely chopped shallot. Over the top you can squeeze the juice of one of the halves of lime. Add in a dash of salt to the bowl. Stir the mix until it appears chunky. Take the sourdough bread and cut into 2-4 slices.
Step 6. Putting the Dish Together
Place the sourdough bread on a serving plate, spread some of that avocado mixture onto the top of each slice you prepared. When you see the fish are cooked through the outside but slightly raw on the inside, you can remove it from the pan and place it on a plate. Drizzle some of the marinade over the fish, add some of the chopped chilli and parsley. Drizzle some olive oil over the meal.
